At the age of 18, with a diploma from the Ecole Hôtelière in Strasbourg in his pocket, Arnaud set off to learn the ropes with some of the great names in French cuisine, including Roger Vergé, chef of the legendary Moulin de Mougins, Michel Guérard, one of France's oldest 3-star chefs, and Alain Chapel and his famous establishment in Mionnay.
"Behind each dish is always a story, the story of men and women, farmers, fishermen, market gardeners or harvesters, with whom I share the same passion: products of exceptional quality. The right seasoning, the right way of cooking and, while keeping things simple, the right combination of flavours: that's how I respect these products and pay tribute to them, that's my approach to cooking.
